Flank Steak Fix Up

Ingredients
- 2 lbs. beef flank steak, scored
- 1 clove garlic, halved
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 4-6 slices bacon
- 1/2 cup all purpose flour
- 1 can (8 oz.) tomato sauce
- 1/2 teaspoon salt
- 1/8 teaspoon marjoram leaves
- 1 tablespoon snipped parsley
- 1/2 cup finely chopped onion
Directions
- Rub steak with garlic and sprinkle with salt and pepper.
- Cut meat lengthwise into 4-6 serving pieces. In a large skillet, cook and drain bacon but reserve 2 tablespoons drippings in skillet. Don't over-cook bacon. It needs to be flexible enough to roll.
- Place a slice of bacon on each piece of meat; roll up and secure with wooden toothpicks. Coat rolls with flour then brown the rolls in the reserved bacon drippings over medium heat.
- Stir together remaining ingredients and pour over meat. Cover tightly; simmer 45-60 minutes or until tender.
- Place rolls on warm platter; remove wooden picks. Heat sauce to boiling, stirring constantly. Pour over rolls.
