Chicken and Pepper Stir Fry

Ingredients

  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 1/2 teaspoon ground ginger
  • 2 cloves garlic, finely chopped
  • 3 boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons cooking oil
  • 6 green onions, cut into 1'' pieces
  • 1 medium green pepper, thinly sliced
  • 1 medium red pepper, thinly sliced
  • 4 cups hot cooked rice

Directions

  1. Mix soy sauce, ketchup, ginger and garlic in a resealable heavy duty plastic bag. Add chicken; seal bag and turn to coat with marinade. Let stand 15 minutes.
  2. Heat 1 tablespoon of the oil in a 10'' skillet over medium high heat. Add onions and peppers. Stir fry until crisp tender, about 1-2 minutes. Remove from skillet.
  3. Heat remaining tablespoon of oil in the skillet. Add chicken and stir fry 4-5 minutes or until no longer pink.
  4. Stir in bell pepper mixture and serve over rice.
