Chicken and Pepper Stir Fry

Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 1/2 teaspoon ground ginger
- 2 cloves garlic, finely chopped
- 3 boneless, skinless chicken breast, thinly sliced
- 2 tablespoons cooking oil
- 6 green onions, cut into 1'' pieces
- 1 medium green pepper, thinly sliced
- 1 medium red pepper, thinly sliced
- 4 cups hot cooked rice
Directions
- Mix soy sauce, ketchup, ginger and garlic in a resealable heavy duty plastic bag. Add chicken; seal bag and turn to coat with marinade. Let stand 15 minutes.
- Heat 1 tablespoon of the oil in a 10'' skillet over medium high heat. Add onions and peppers. Stir fry until crisp tender, about 1-2 minutes. Remove from skillet.
- Heat remaining tablespoon of oil in the skillet. Add chicken and stir fry 4-5 minutes or until no longer pink.
- Stir in bell pepper mixture and serve over rice.
