Hungarian Beef and Noodles Casserole

Ingredients
- 1 lb. lean ground beef
- 1/2 teaspoon salt
- Pepper to taste
- 1 can (16oz.) tomatoes, chopped
- 1 can (8oz.) tomato sauce
- 1 can (13oz.) beef broth
- 1 cup chopped green pepper
- 1 tablespoon paprika
- 6 oz. egg noodles
- 1/4 cup plain low-fat yogurt (optional)
Directions
- Preheat oven to 500º
- Mix beef with salt and pepper; shape in 20 small balls. Place on rack in a 13''X9'' baking pan. Bake for 10 minutes. Remove from rack, drain and discard fat from pan.
- Place meatballs back in pan. Stir in tomatoes, tomato sauce, beef broth, green pepper, paprika and noodles; mix well.
- Lower heat to 425º. Bake, uncovered 25 minutes or until noodles are tender and sauce is thickened. Serve immediately, topped with yogurt if desired.
