Ingredients
- 1 1/2lbs. potatoes (about 4 medium) boiled, cooled and shredded
- 2 tablespoons finely chopped onions
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons cooking oil
Directions
- Mix potatoes with salt and pepper. Heat butter and oil in a 10''-12'' skillet.
- Spread mixture in skillet leaving 1/2'' around sides. Cook over low heat until bottom is brown, 15-20 minutes.
- Cut potato mixture into quarters, flip and cook 15-20 minutes longer or until browned.
- Add oil if necessary to prevent sticking
