Down Under Chicken

Prep Time: 40 minutes || Cook Time: 15 minutes || Total: 55 Minutes
Servings: 4 || Yields: 4 half chicken breasts
A savory sweet chicken dish topped with bacon, mushrooms, and cheese.

Ingredients

  • 4 Skinless Boneless Chicken Breast Halves
  • 4 Slices of Bacon - cut in half
  • 2 Teaspoons Seasoning Salt (or just salt and pepper)
  • 1/2 Cup Dijon Mustard
  • 1/2 Cup Honey
  • 1/4 Cup Mayonnaise
  • 1 Tablespoon Dried Onion Flakes
  • 1 Cup Fresh Sliced Mushrooms (if desired - recipe works well without them)
  • 2 Cups Shredded or 4 Slices Colby-Jack Cheese
  • 2 Tablespoons Parsley

Directions

  1. Lightly pound the chicken breasts and rub them with the seasoning salt or some salt and pepper. Refrigerate for 30 minutes.
  2. Preheat oven to 375 degrees F
  3. In a medium bowl, combine the mustard, honey, mayonnaise, and onion flakes. Refrigerate until needed.
  4. In a large skillet, cook bacon over medium heat until crisp. Set aside. Don't discard grease.
  5. In the pan with the bacon grease, Sauté chicken breasts for 2-4 minutes per side until browned.
  6. Place breasts In a 9x9 baking dish apply half of the honey mustard sauce then layer each breast with 2 half slices of bacon, and mushrooms if using. Top with cheese.
  7. Bake for 15 minutes until cheese is melted and chicken juices run clear.
  8. Top with parsley and serve with remaining honey mustard sauce.
