Down Under Chicken

A savory sweet chicken dish topped with bacon, mushrooms, and cheese.
Ingredients
- 4 Skinless Boneless Chicken Breast Halves
- 4 Slices of Bacon - cut in half
- 2 Teaspoons Seasoning Salt (or just salt and pepper)
- 1/2 Cup Dijon Mustard
- 1/2 Cup Honey
- 1/4 Cup Mayonnaise
- 1 Tablespoon Dried Onion Flakes
- 1 Cup Fresh Sliced Mushrooms (if desired - recipe works well without them)
- 2 Cups Shredded or 4 Slices Colby-Jack Cheese
- 2 Tablespoons Parsley
Directions
- Lightly pound the chicken breasts and rub them with the seasoning salt or some salt and pepper. Refrigerate for 30 minutes.
- Preheat oven to 375 degrees F
- In a medium bowl, combine the mustard, honey, mayonnaise, and onion flakes. Refrigerate until needed.
- In a large skillet, cook bacon over medium heat until crisp. Set aside. Don't discard grease.
- In the pan with the bacon grease, Sauté chicken breasts for 2-4 minutes per side until browned.
- Place breasts In a 9x9 baking dish apply half of the honey mustard sauce then layer each breast with 2 half slices of bacon, and mushrooms if using. Top with cheese.
- Bake for 15 minutes until cheese is melted and chicken juices run clear.
- Top with parsley and serve with remaining honey mustard sauce.
