Chipotle Lime Slow Cooker Chicken

A spicy blend of tender chicken breast and vegetables topped with melted cheese and bacon.
Ingredients
- 2 chicken breasts
- 1 cup chicken broth
- 6 orange/red mini bell peppers
- 4-6 baby portabella caps
- 1/3 cup sliced jalapeños
- 1/2 cup presoaked or canned black beans
- 1 tbsp Wildtree chipotle lime rub (or taco seasoning)
- 4 slices jalapeño bacon
- 1/2 cup shredded monterey jack cheese
Directions
- Place chicken breast in slow cooker
- Pour in chicken broth
- Slice mini bell peppers in half (tops and seeds removed)
- Remove stems from baby portabellas and half or quarter to bite sized
- Place peppers, mushrooms, jalapeños and beans in broth around the chicken leaving chicken tops exposed.
- Sprinkle chipotle lime rub over all ingredients.
- Cook on low for 8 hours
- Near end, cook bacon and chop or crumble.
- Place chicken and vegetables on dish, top each breast with 1/4 cup cheese. Broil until bubbling and browning.
- Top with bacon crumbles.
