Keto Cheese Dough

Pizza crust or pocket dough made from cheese and almond flour.

Ingredients
- 1 egg
- 3/4 cup fine almond flour
- 2 tbsp cream cheese
- 1 1/2 cups shredded mozzarella
Directions
- Preheat oven to 400 deg F
- Place mozzarella and cream cheese in glass bowl.
- Microwave on full power for 60-90 seconds until fully melted.
- Using a rubber spatula or spoon, mix beaten egg and almond flour into cheeses.
- If needed, mix dough by hand, be careful it may be hot still.
- Line a cookie sheet or pizza pan with parchment paper. This dough is very sticky and parchment paper is a must!
- For pizza, place dough ball between parchment paper and roll out to about 1/4'' thick. Pre-bake for 8 minutes. Use a fork to poke holes in any bubbles. Continue baking for 4-6 more minutes until it starts to brown.
- Add toppings and bake 8-10 minutes until cheese melts.
- For pockets or bagel dogs - break dough into 2 or 4 sections. Roll or hand spread to about 1/4'' thick. Stuff with filling and fold over, pressing edges together. Poke holes in top to vent and bake for about 20 minutes until it starts to brown.
