Jalapeño Cucumber Margarita

Ingredients

  • 4 Oz Cucumber Juice (less for a stronger drink)
  • 2 Oz Silver Tequila
  • 1/2 Oz Cointreau (or Triple Sec)
  • 2 Oz Lime Juice (about 2 limes)
  • 1 1/2 Oz Jalepeno Syrup
  • Coarse Sea Salt
  • Chili Powder

Directions

  1. Jalapeño syrup: bring 1/2 cup water to a boil. turn heat down to low/med and stir in 1/2 cup granulated sugar until dissolved. Add 1 jalapeño sliced in half and simmer for 5 minutes. Cool/Refrigerate up to 1 week.
  2. Cucumber Juice: remove skin from 2 large cucumbers and puree in blender.
  3. Mix salt and chili powder. Run a lime wedge around the rim of the glass and dip in salt mix.
  4. Add Cucumber Juice, Tequila, Cointreau, Lime Juice and Jalapeño syrup to shaker with ice. Shake for 20 seconds and strain into glass with ice. Add sliced jalapeño into glass and lime wedge for garnish.
