Fudgy Pecan Bourbon Balls

Ingredients
- Small paper baking cups
- 8 oz. 60% cacao dark chocolate cut into 1/2'' pieces
- 1/2 cup heavy whipping cream
- 1/4 cup (2oz.) bourbon
- 3/4 cup pecan halves, finely chopped (Pistashios are good too)
Directions
- Place the chocolate pieces in a medium mixing bowl
- In a saucepan over medium heat, combine the heavy cream and bourbon to a near boil. Remove from the heat and pour over the chocolate pieces
- Let stand 1 minute then stir vigorously until mixture is blended.
- Let the mixture cool for 15 minutes
- Cover with plastic wrap and chill until firm, about 2 hours
- Place the chopped nuts on a shallow plate and set aside
- Line a baking sheet with parchment paper
- Working quickly, use a teaspoon or small scoop (2 teaspoon size) dipped in hot water (then dried)
- Shape into a ball.
- Place each ball onto the chopped nuts
- Once the plate is full, wash your hands and roll each ball into the nuts to cover completely
- Transfer the balls onto a parchment lined baking sheet. Repeat with remaining mixture and place each into paper baking cup
- Chill the balls until firm, about 1 hour
- Store in an air tight container up to 1 week
