Herb Roasted Turkey Breast

Ingredients
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon chopped fresh Sage
- 1 Tablespoon chopped fresh Rosemary
- 1 Teaspoon minced garlic
- 1/2 teaspoon celery seed
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 boneless, skin on turkey breast
Directions
- In a small bowl, combine sage, rosemary, garlic, celery salt, salt and pepper to make a paste.
- Rub olive oil all over turkey breast, including under the skin.
- Place one breast on top of the other, skin sides out, and use cooking twine to tie into a compact roast.
- Wrap in plastic and refrigerate 6-24 hours.
- Preheat oven to 350º and place turkey in a roasting pan fitted with a roasting rack.
- Roast until juices run clear and the internal temperature registers 165º, approximately 90 minutes to 1 hour, 45 minutes.
- Let rest, loosely tented with foil about 30 minutes before carving
Notes
If you're not crazy about turkey you could also use chicken breast. Adjust roasting time
