Mashed Potato Casserole

A zippier version of a basic mashed potato casserole
Ingredients
- 2 1/2 lb. russet potatoes
- Salt (to boil potatoes)
- 8 Tablespoons (1 stick) unsalted butter, softened
- 4 oz. plain cream cheese, softened
- 2 Tablespoons Horseradish
- 1/2 cup milk or heavy cream
- 1/4 cup chopped chives
- Pepper to taste
- 2 Tablespoons unsalted butter plus additional to grease dish
Directions
- Preheat oven to 350ยบ
- Peel and chop potatoes into chunks. Boil in a large pot of salted water until soft.
- Drain, then mash, stirring in 8 tablespoons softened butter, cream cheese, horseradish and the milk or cream.
- Season with chives, salt and pepper.
- Grease a 6 cup baking dish with unsalted butter, spread potato mixture into dish.
- Dot the top with remaining 2 tablespoons of butter and bake, uncovered, until hot 40-50 minutes.
Notes
Make ahead up to 2 days (cover and refrigerate) but don't dot the top with the extra 2 tablespoons of butter until ready to bake.
