Instant Pot Artichokes

Cut your cooking time to 1/4 with this instant pot steamed artichoke recipe
Ingredients
- 2-4 Medium/Large Artichokes
- 1 1/2 Cup water
- 1/2 Cup Canola or Vegetable Oil
- 2 Tablespoons Sea Salt (or 1 Tbsp Iodized salt)
- 1 Tablespoon Garlic Powder
- 1 Bay Leaf
Directions
- Prepare your artichokes by slicing off the stem and top 1/2 to 1 inch. Trim the tips of each leaf about 1/16'' to remove the spiky end. gently pull apart to loosen the leaves.
- Mix water, oil, salt, garlic powder in the instant pot. Add the bay leaf
- Place the artichokes top down and cover with pressure seal on
- Manually set your instant pot to cook for 20 minutes
- When time is up, release the pressure then flip the artichokes top up.
- Ladle the liquid over the artichokes several times helping to open them and adding the flavor.
- Close lid and seal again for 10-15 minutes depending on size and quantity
- When timer beeps, allow the pressure to naturally release for 15-20 minutes then enjoy perfectly tender and flavored artichokes that require no dip! (ofc I won't judge you if you choose to dip in your favorite Aoili - I like Truffle or garlic! Lemon is a classic favorite for artichokes but this recipes flavor lends more to garlic)
