Tacos al Pastor (Ground Pork Method & Adobo Recipe)

Quick and easy al Pastor recipe. Make Adobo ahead of time and use for marinades.

Ingredients

  • Chile Mix:
  • Add to pot of water (4 to 6 cups)
  • 15 Guajillo chilies
  • 3 Ancho chiles
  • 3 Chile Arbol peppers
  • Quarter to half of an onion
  • 6 garlic cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • 4 cloves Clavo Entero (whole cloves, they are dried flower buds of the clove tree)
  • 1/2 tsp Oregano
  • Adobo:
  • 6 oz Pineapple juice
  • 1 Tablespoon of Salt, Pepper, Garlic (OG, Pit Master brand)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons of achiote
  • 2 chipotle peppers in Adobo

Directions

  1. Chile Mix:
  2. Add everything to large sauce pan and bring to a simmer, let cool 5-6 minutes.
  3. Make Adobo:
  4. Discard bay leaf from chili mix and transfer remaining solid ingredients to blender
  5. Add 1/2 Cup of chili water mix to blender. Continue adding water until desired thickness.
  6. Make meat:
  7. Blend - Add chili mix water (1st step) as needed to thin Adobo enough to strain
  8. Strain Adobo into container (tedious)
  9. Cook
  10. Line hot griddle / skillet in lard
  11. Add 1 pound ground pork
  12. Cook until pork roasts (this happens fast)
  13. Reduce heat, add adobo as desired (top with pineapple if desired)
  14. Simmer for 5 minutes with lid on
  15. Check temperature and ensure it is 175f
