Garden Delight Potato Salad

Ingredients
- 1 can (15oz) VEG-ALL mixed vegetables
- 2 cups diced cooked potatoes
- 1/4 cup sliced green peppers
- 1/4 cup diced sweet pickle
- 1 bunch of green onions, cut into 3/4'' pieces, including tops
- 6 salami slices
- 3 hard cooked eggs, sliced
- 3/4 cup mayonnaise
- 2 teaspoons horseradish
- 1 dash hot pepper sauce
- 1 1/4 teaspoon salt
- lettuce leaves
Directions
- Drain canned vegetables thoroughly and combine with diced potatoes, green pepper, sweet pickle, green onions, 4 slices of salami, cut into strips and 2 of the hard cooked eggs. Chill thoroughly.
- Mix together mayonnaise, horseradish, hot pepper sauce and salt. Add to chilled vegetable mixture and toss lightly.
- Line a chilled salad bowl with crisp greens, fill with salad.
- Garnish with remaining salami strips and egg slices.
