Artichoke Dip

Ingredients
- 2 8oz. packages cream cheese
- 1 14oz. can artichoke hearts, drained. Reserve brine.
- 1/4 cup green onion, diced
- 2 tablespoons Parmesan cheese, fresh grated or dry
- 1/4 teaspoon bottled hot pepper sauce
- 1/4 teaspoon white or black pepper
- 1 clove garlic, minced
- Salt to taste
Directions
- With electric mixer, beat cream cheese until fluffy, about 2 minutes.
- Cut artichoke hearts into quarters
- Mix artichoke hearts and brine to cream cheese.
- Mix well, about 2 minutes on low to medium speed
- With mixer on low, stir in green onion, Parmesan cheese, hot pepper sauce and pepper. Mix for about 1 minute
- Salt to taste
- Heat dip, stirring frequently, in a saucepan over medium heat.
Notes
Substitute Neufchatel for the cream cheese for 1/3 lower fat. Add hot pepper sauce, a drop at a time, for a spicier dip.
