Onion Soup

Prep Time: 15 minutes || Cook Time: 30 minutes || Total: 45 Minutes

Ingredients

  • 1/4 cup butter
  • 4 large yellow onions, thinly sliced
  • 1/2 teaspoon sugar
  • 6 cups canned beef broth
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon paprika
  • Salt and Pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • French bread, thinly sliced

Directions

  1. Heat butter in large saucepan over medium heat. Add onion and sugar and saute' until golden.
  2. Add broth, worcesteshire and paprika and bring to a boil.
  3. Reduce heat and simmer uncovered 15-20 minutes.
  4. Add salt and pepper.
  5. Meanwhile, toast bread on one side under broiler. Spread untoasted side with butter and sprinkle with parmesan.
  6. Return to broiler until lightly toasted.
  7. Ladle soup into bowls and float toast.

Notes

If soup bowls are ovenproof, float bread and run under broiler to toast second side.
