Cream Of Broccoli Soup

Ingredients

  • 2 medium bunches broccoli, cut up
  • 2 medium potatoes, peeled and thinly sliced
  • 4 Tablespoons butter
  • 1 medium onion, sliced
  • 4 Tablspoons flour
  • 2 cups warm chicken broth
  • 2 cups warm milk
  • 1/2 cup warm heavy cream
  • 2 teaspoons dried basil
  • salt and pepper
  • SET ASIDE 8 FLORETS, COOKED

Directions

  1. Cook broccoli and potatoes in salted water until tender.
  2. Heat butter in large saucepan, add onions and cook until transparent. Add flour and stir until blended.
  3. Cook 3-4 minutes then add broth and milk, stirring until smooth.
  4. Puree broccoli and potatoes until smooth. Gradually add half of the broth/milk mixture and puree again until smooth.
  5. Return mixture to saucepan.
  6. Add remaining milk/broth and stir well with wire whisk.
  7. Add cream gradually, stirring until a good constistency is achieved. Add salt, pepper and basil.
  8. Garnish with florets.
