Quiche Lorraine

A classic brunch favorite

Ingredients

  • 1 9'' pie crust
  • 12 slices bacon (about 1/2 lb.) crisply fried and crumbled
  • 1 cup (4 oz.)shredded Swiss cheese
  • 1/2 cup minced onion
  • 4 eggs
  • 2 cups light cream or whipping cream
  • 3/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon cayenne red pepper

Directions

  1. Heat oven to 425ºF. Sprinkle bacon, cheese and onion in pastry lined pan.
  2. With a hand mixer, blend remaining ingredients; pour into pie pan and bake for 15 minutes.
  3. Reduce oven temperature to 300ºF. Bake pie 30 minutes longer or until knife inserted 1'' from edge comes out clean.
  4. Let pie stand 10 minutes before cutting.
