Hobo Casserole

Ingredients

  • 6 oz. shredded cheddar cheese
  • 3 cups hash brown potatoes, thawed
  • 1 ham steak, diced
  • 1/4 cup green onion, chopped
  • 4 eggs, beaten
  • 1 can evaporated milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Preheat oven to 350ºF.
  2. In a large bowl, mix cheese, hash brown potatoes, green onion, salt and pepper. Spoon into a 9'X12'' glass baking pan, sprayed with a non-stick cooking spray.
  3. Mix eggs and evaporated milk together; pour over first 4 ingredients.
  4. Bake for approximately 60 minutes or until top is golden.
