Christmas Brunch Frittata

Ingredients

  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Beat together eggs, salt and pepper. Fold in shredded cheese and set aside.
  2. Melt butter over medium heat in a 10 inch skillet that is non-stick AND ovenproof.
  3. Add green onions (set aside a teaspoon for garnish) bell peppers and onions.
  4. Pour eggs over peppers.
  5. Cover and cook over medium low heat for about 10 minutes, being certain the eggs are set. Check for a lightly browned bottom.
  6. Turn oven on to broil.
  7. Move the pan from the stove top to the oven and broil about 5 inches from the heat until lightly browned.

Notes

Bacon or sausage would make an excellent side dish
