Lemon Ice

A great all natural summertime treat

Ingredients

  • 2 cups water
  • 1 cup sugar
  • 1 tablespoon finely shredded lemon peel (just the yellow part; avoid the white pith). You can use the jarred peel.
  • 1 cup lemon juice

Directions

  1. Heat water and sugar to boiling. Reduce heat and simmer uncovered 5 minutes.
  2. Remove from heat and stir in lemon peel and lemon juice.
  3. Cool to room temperature. Pour into a loaf pan 9''X5''X3''.
  4. Freeze 3-4 hours, stirring every 30 minutes.
