Maple Glazed Acorn Squash

Ingredients

  • 2 large acorn squashes
  • 1/3 cup maple syrup
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup pecans, coarsely chopped

Directions

  1. Preheat oven to 425ºF. Cut each squash lengthwise in half and discard seeds. Cut each half lengthwise into 3 wedges.
  2. In a glass measuring cup, combine maple syrup, butter, salt and cinnamon.
  3. Place squash wedges, flesh side down in a jelly roll pan or a pan with sides. Pour syrup mixture over squash.
  4. Cover pan with foil and bake about 30 minutes or until tender, turning squash once halfway through baking.
  5. Remove foil and bake 5 minutes longer or until glaze thickens slightly.
