Roasted Acorn Squash

Ingredients

  • 4 acorn squash, halved lengthwise and seeded
  • 2 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Grated nutmeg

Directions

  1. Preheat oven to 425ºF. Spray a large rimmed baking sheet with nonstick spray.
  2. Put the squash, cut side up, on the baking sheet. Brush the flesh with the melted butter then sprinkle with salt pepper and nutmeg.
  3. Cover with foil and roast about 30 minutes. Uncover and roast until the flesh is lightly browned and very soft, about 10-15 minutes.2
