Sausage-Vegetable-Rice Skillet

Ingredients

  • 1 lb. bulk pork sausage
  • 3/4 cup rice
  • 2 medium zucchini, cubed
  • 1 large tomato, cubed or 1 cup drained diced tomato
  • 1/2 cup onion, chopped
  • 1 small clove garlic, crushed
  • 3/4 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups hot water

Directions

  1. In a 10'' heavy skillet, brown sausage well, stirring to break up large chunks. Drain and discard all fat.
  2. Stir in rice and cook, stirring 2 minutes or until rice becomes opaque.
  3. Stir in remaining ingredients; bring to a boil; cover and simmer 20 minutes or until rice is tender and all liquid is absorbed. Stir to mix.
