Sausage, Pepper and Potato Skillet

Ingredients

  • 1 lb. Italian style sausages, cut into 1'' chunks
  • 1 medium onion, cut into 1'' chunks
  • 1 green pepper, cut into 1'' chunks
  • 1 red pepper, cut into 1'' chunks
  • 4 medium potatoes, peeled and cut into 1/2'' chunks
  • 3/4 cup water
  • 1 teaspoon salt
  • Dash black pepper

Directions

  1. In large skillet brown sausage on all sides. Drain off excess fat and add remaining ingredients.
  2. Cover and cook over low heat 15-20 minutes or until potatoes are fork tender.

Notes

Serve this with eggs for breakfast or brunch
