Scallops with Lemon-Butter Sauce

Ingredients

  • 1 lb. sea scallops
  • 2 tablespoons flour
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon pepper, divided
  • 1 tablespoon olive oil or cooking oil
  • 2 tablespoons butter, divided
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons finely chopped parsley

Directions

  1. Coat scallops in flour. Season with 1/4 teaspoon of salt and 1/8 teaspoon of pepper.
  2. Cook scallops in 1 tablespoon oil and 1 tablespoon of the butter in large skillet over medium high heat for 2 minutes per side.
  3. Remove scallops and add remaining butter, lemon juice, parsley, salt and pepper. Mix well.
  4. Heat on low and serve sauce over scallops.
