Shrimp and Mushrooms

Total: 30 Minutes
Servings: 4 || Yields:
Ingredients
2 tablespoons butter
2 cups chopped celery
1 can (6oz.) sliced mushrooms, drained
1 tablespoon soy sauce
1 teaspoon freshly ground ginger
1/8 teaspoon pepper
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup beef broth
8 oz. shrimp, cooked
2 cups hot cooked rice
Directions
In a large skillet, melt butter. Cook and stir celery, mushrooms, soy sauce, ginger and pepper until celery is tender, about 5 minutes.
Mix cornstarch with cold water.
Stir cornstarch mixture and beef broth into the celery and mushrooms. Cook, stirring frequently, until mixture thickens.
Stir in shrimp and heat through.
Spoon over hot cooked rice (1/2 cup per serving)
