Shrimp Amandine

Ingredients

  • 1/2 cup sliced or slivered almonds
  • 2 tablespoons butter or margarine
  • 3/4 lb. cleaned shrimp
  • 1 can (13oz.) chicken broth
  • 1 package (10oz.) frozen green peas and pearl onions
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups cooked rice

Directions

  1. Saute' almonds in butter until lightly browned.
  2. Add shrimp and saute' about 5 minutes, until shrimp are cooked through.
  3. Add broth, vegetables and seasonings.
  4. Bring to a full boil for 1 minute.
  5. Serve over cooked rice.
