Garlic Shrimp

Ingredients

  • 1 stick of butter or margarine
  • 1/3 cup olive oil
  • 2 tablespoons parsley
  • 4 teaspoons chopped onion
  • 4 cloves chopped garlic
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 2 teaspoons Pernod (Anise flavored liqueur)
  • 1/2 teaspoon lemon juice
  • 3/4 cup white cooking wine
  • 1 1/2 lbs. shrimp, shelled and cleaned
  • Flour
  • Juice of 1/2 lemon

Directions

  1. Toss shrimp with flour and dry spices
  2. Heat oil in a large skillet. Cook shrimp very fast, about 3 minutes per side. Drain oil except 1 teaspoon.
  3. Saute' onion until opague then add lemon juice, Pernod and white wine. Stir well.
  4. Add garlic and butter and toss shrimp quickly.
  5. Serve when butter is melted.
