Shrimp Sate' with Pineapple Salsa

Ingredients

  • SALSA:
  • 3/4 cup finely chopped pineapple
  • 1/4 cup finely chopped red onion
  • 1 tablespoon seeded and minced jalapeno pepper
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon cider vinegar
  • 1 teaspoon honey
  • SATE:
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • 24 large shrimp, peeled and cleaned
  • Cooking spray
  • 4 cilantro springs

Directions

  1. Heat grill or broiler pan
  2. Prepare Salsa by combining first 6 ingredients in a medium glass bowl.
  3. To prepare sate', combine mint, lime juice salt and chili powder in a large bowl and add shrimp, tossing to coat.
  4. Thread shrimp onto each of 8 metal skewers and place on grilling rack sprayed with nonstick spray.
  5. Grill or broil 1 1/2 minutes on each side or until shrimp turn pink.
  6. Garnish with cilantro sprigs, if desired.

Notes

You can use canned (drained) or fresh pineapple
