Bacon Wrapped Flank Steak

Ingredients

  • 2 lbs. beef flank steak, scored*
  • 1 clove garlic, halved
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4-6 slices bacon, raw
  • 1/2 cup flour
  • 1 can (8oz.) tomato sauce
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, snipped
  • 1/2 cup chopped onion

Directions

  1. Score and lightly pound the flank steak. Rub with garlic and sprinkle with the salt and pepper.
  2. Cut meat crosswise into 4-6 serving pieces.
  3. In a large skillet, cook bacon until barely crispy. Drain bacon on paper towels but keep 2 tablespoons of the drippings in the skillet.
  4. Place a slice of bacon on each piece of meat and roll up. Secure with a wooden toothpick.
  5. Coat rolls in flour and place in bacon drippings in the skillet, browning over medium heat. Brown all sides.
  6. Stir together the tomato sauce, salt, parsley and chopped onion. Pour over meat.
  7. Cover tightly and simmer about 60 minutes or until beef is tender.
  8. Place steak rolls onto a warm platter. Heat sauce to boiling, stirring constantly and pour over rolls.

Notes

*cut flank steak lightly in a crisscross pattern so it's pliable. Serve over your choice of rice, noodles or mashed potatoes.
