French Dip Sandwich

Ingredients

  • 2 large onions, cut into 1/4'' thick slices
  • 1/4 cup butter
  • 1 beef rump roast OR bottom round roast (3-4 lbs.)
  • 5 cups water
  • 1/2 cup soy sauce
  • 1 envelope onion soup mix
  • 1 teaspoon Kitchen Bouquet® or other browning sauce
  • 1 clove garlic, minced
  • 1 cup shredded Swiss cheese
  • 12 French rolls or Hoagies, split

Directions

  1. In a large skillet, saute onions in butter until tender. Transfer to 5 qt. slow cooker. Cut roast in half; place over onions in the crock pot.
  2. In a large bowl, combine the water, soy sauce, soup mix, Kitchen Bouquet and garlic; pour over roast. Cover and cook on low for 7-8 hours or until meat is tender.
  3. Remove roast and let stand for 15-20 minutes. Thinly slice meat across the grain. Place meat on the bottom portion of the rolls and sprinkle with Swiss cheese.
  4. Place on a baking sheet and broil 3-4 inches from the heat for about a minute, or until cheese is melted. Replace tops.
  5. Skim fat from cooking juices; strain and serve as an Au Jus gravy.
