Beef Stroganoff

Ingredients

  • 3/4 lb. sirloin or flank steak, cut into thin strips
  • 2 cups sliced mushrooms
  • 1 medium yellow onion, sliced
  • 2 tablespoons oil
  • 1 can (13oz.) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • 1/3 cup tomato paste
  • 1 1/2 cups rice

Directions

  1. Cook rice according to package directions; set aside.
  2. Brown meat quickly in oil then add mushrooms and onions, cooking and stirring until onions are tender, about 3 minutes.
  3. Add the broth, Worcestershire sauce, paprika and tomato paste, bring to a boil and cook about 1 minute. Stir in rice and heat through.
  4. Stir in sour cream and serve.
