Herbed Pot Roast

Ingredients

  • 1 boneless beef rump or chuck roast (3-3 1/2 lbs.)
  • 1 tablespoon cooking oil
  • 1 teaspoon salt
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 can (10 oz.) beef broth
  • 8 carrots, cut into thirds
  • 8 medium potatoes, peeled and quartered
  • 1 large onion, quartered
  • 1 cup water

Directions

  1. Preheat oven to 325 degrees F.
  2. In a Dutch oven brown roast on all sides in the oil.
  3. Combine the seasonings; sprinkle over meat. Add broth and bring to a boil.
  4. Cover and bake at 325ºF for about 2 hours, basting occasionally.
  5. Add carrots, potatoes, onion and water. Cover and bake an additional 1 hour or until vegetables are tender.
  6. If desired, thicken pan juices for gravy.
