Lemon Thyme Crusted Beef Rib Roast

Ingredients

  • 1 (6-8 lb.) beef rib roast, small end
  • 3 tablespoons chopped fresh thyme
  • 2 tablespoons minced garlic
  • 1 tablespoon freshly grated lemon peel
  • 1 tablespoon olive oil
  • 1 tablespoon coarsely ground or cracked black pepper
  • 1 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F. Combine paste ingredients; press evenly onto beef roast. Place roast, fat side up, in a shallow roasting pan. Insert ovenproof meat thermometer so tip is center in thickest part of beef, not resting in fat or touching bone. Do not add water or cover.
  2. Roast 2 1/4 to 2 1/2 hours for medium rare, or until thermometer registers 135 degrees.
  3. For medium, roast 2 3/4 to 3 hours or until thermometer reaches 150 degrees.
  4. Transfer roast to carving board, tent loosely and let rest 15-20 minutes. Temperature will continue to rise about 10 degrees to reach 140 degrees for medium rate or 160 degrees for medium.
  5. Carve roast into slices.
