Continental Lemon Pork

Ingredients

  • 1 whole pork tenderloin (about 1 lb.)
  • 1/3 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 eggs
  • 1/4 cup milk
  • 2 tablespoons cooking oil or butter
  • 1 tablespoon lemon juice
  • 4 tablespoons butter
  • 1 lemon, sliced (for garnish)

Directions

  1. With a sharp knife held in a slanted position, cut pork loin crosswise into 1/4'' slices. With meat mallet, pound each pork slice to about 1/8'' thickness. On waxed paper, combine flour, salt and pepper.
  2. In a pie plate, beat the eggs and milk until blended. Dip tenderloin pieces into flour mixture, then into egg mixture to coat.
  3. In a large skillet over medium heat, heat cooking oil or butter. Add tenderloin pieces, a few at a time, and cook until golden on both sides. Remove pieces to warm platter as they brown and add more oil or butter as needed. Keep tenderloin pieces warm.
  4. Into drippings in skillet, stir lemon juice and 4 tablespoons of butter. Cook until butter is melted, stirring to loosen brown bits from bottom of skillet.
  5. Pour butter sauce over tenderloin pieces and garnish wit lemon slices.
