Sweet and Sour Pork

Ingredients

  • 1 lb. boneless pork, cubed and boiled for 5 minutes.
  • BATTER FOR PORK:
  • 1/4 cup flour
  • 1/3 cup cornstarch
  • 1 teaspoon salt
  • 1 tablespoon soy sauce
  • 2 eggs
  • SAUCE:
  • 1 clove garlic, finely chopped
  • 1/2 cup red wine vinegar
  • 2 tablespoons ketsup
  • 1 tablespoon soy sauce
  • 1/2 cup water
  • 2 tablespoons sweet pickle juice with a few bits of pickle
  • 3/4 cup sugar
  • 1 small can pineapple bits with juice
  • 1 green bell pepper, cut into bite sized chunks
  • 2 carrots, cleaned and sliced
  • 1 tablespoon cornstarch

Directions

  1. Marinate pork in batter at least 30 minutes, stirring occasionally. Heat oil in a deep fryer to 400ºF. Fry pork until golden brown, about 1-2 minutes. Drain and keep warm.
  2. Fry garlic in 1 tablespoon oil. Add vinegar, ketsup, soy sauce, water, pickle and sugar.
  3. Blend cornstarch into pineapple juice (about 1/4 cup) and add to vinegar mixture. Cook and stir constantly until sauce is thick.
  4. Add peppers, carrots and pineapple bits and mix well.
  5. Let sauce rest 5 minutes.

Notes

Mix pork into sauce or serve separately. You can substitute chicken for the pork.
