Ingredients
8 thinly cut pork chops
1 tablespoon cooking oil
1/2 cup chopped onion
3/4 teaspoon salt
1 cup apple cider or juice, divided into 3/4 cup and 1/4 cup
2 medium unpeeled sweet apples, cored and cut into wedges
1 tablespoon cornstarch
Chopped parsley for garnish
Directions
In a skillet, heat 1 tablespoon cooking oil. Brown chops on both sides and remove from skillet.
Add 1/2 cup chopped onion and saute' 2 minutes or until tender. Return chops to skillet and sprinkle with 3/4 teaspoon salt.
Add 3/4 cup apple cider or juice. Top with the apple wedges. Cover and simmer for 15 minutes.
Dissolve 1 tablespoon cornstarch in 1/4 cup cider or juice and blend until smooth. Remove chops to a serving platter.
Stir cornstarch mixture into skillet. Bring to a boil and cook for 1 minute. Pour sauce over chops. Sprinkle with parsley garnish, if desired.
