Cranberry Glazed Pork Roast

Ingredients

  • Boneless pork loin roast (about 4 lbs.)
  • 2 teaspoons cornstarch
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon grated orange peel
  • 2 tablespoons orange juice
  • 2 tablespoons dry sherry
  • 1 can (16oz) whole berry cranberry sauce

Directions

  1. In a small saucepan stir together all ingredients except pork roast. Cook, stirring over medium heat until thickened then set aside.
  2. Place roast in shallow baking dish. Roast at 325ºF for 45 minutes.
  3. Spoon 1/2 cup glaze over roast and continue roasting for 30-45 minutes longer or until internal roast temperature is 155ºF to 160ºF. Let roast stand for 10 minutes before slicing and serve with remaining sauce.
