Pork Chops and Apples with Stuffing

Recipe makes 2 casseroles, 6 servings each. Freeze one for a later time or halve this recipe.

Ingredients

  • 12 pork tenderloin chops
  • 2 teaspoons cooking oil
  • 2 cans (20oz.) pie-sliced apples, drained
  • 1/2 cup brown sugar
  • 6 cups herb seasoned stuffing mix
  • 1/2 cup chopped celery
  • 1/4 cup butter
  • 3 tablespoons instant minced onion
  • 1 teaspoon salt
  • 2 cups beef bouillon

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, saute' chops in cooking oil on both sides. Season with salt and pepper. Divide chops between two 12X8'' baking dishes.
  3. Combines apples and brown sugar. Spoon over chops. Combine stuffing mix, celery, butter, onion and salt; toss with beef bouilllon until moistened. Press stuffing into 1/2 cup measure, unmold onto each pork chop. Cover tightly. Bake for about 1 hour or until pork is done.

Notes

Don't bake 2nd casserole. Seal tightly and freeze. When ready, bake frozen casserole, covered, in 400ºF oven about 75-90 minutes or until pork is done.
