Chicken, Pork and Beef Satay

Ingredients

  • 1 cup teriyaki sauce
  • 4 cloves garlic, minced
  • 3 tablespoons lime juice
  • 2 1/2 tablespoons minced fresh ginger
  • 2 tablespoons brown sugar
  • 1/4 lb. each pork tenderloin and filet Mignon, cut into 3 1/2''X1/4'' strips
  • 1/4 lb. boneless, skinless chicken breasts cut into 1/2'' strips
  • 36 bamboo skewers, soaked in water 30 minutes
  • Ornamental Kale or Asian noodles, cooked

Directions

  1. Combine first 5 ingredients in a large baking dish. Stir until sugar dissolves. Add meats, stir to coat, cover and chill 1 hour. Remove meats from marinade and thread on skewers.
  2. Preheat broiler and broil skewered meats until cooked, about 3 minutes per side. Line a large platter with the kale leaves or noodles and arrange skewers in center. Garnish with lime slices, if desired.
  3. Serve with Chinese peanut sauce or Ginger-Soy Sauce*
