Pork Scallopina

Ingredients

  • 1 lb. thin sliced boneless pork chops
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 teaspoon butter
  • 1 teaspoon vegetable oil
  • 4 slices mozzarella cheese (2oz.)
  • 2 tablespoons water

Directions

  1. Place pork between sheets of waxed paper and pound to 1/4'' thickness. Sprinkle both sides with salt and pepper. In a skillet large enough to hold meat in a single layer, heat butter and oil over high heat. When pan is very hot and butter is melted, add pork and cook 30 seconds per side, until meat is lightly browned.
  2. Put a slice of cheese on each scallopina, cover pan and reduce heat to medium. Cook 1 minute, just until cheese melts.
  3. Transfer meat to plates; add water to skillet and cook over high heat for 1 minute, scraping up the brown bits sticking to the pan. Pour over meat and cheese and serve immediately.
