Stuffed Turkey Tenderloin

Ingredients

  • 3/4 sweet onions, thinly sliced
  • 3 teaspoons cooking oil
  • 1 cup thinly sliced fresh mushrooms
  • 1/2 cup skinned and chopped red pear
  • 1 teaspoon snipped fresh thyme (or 1/4 teaspoon dried)
  • 1 10 oz. turkey breast tenderloin

Directions

  1. In a large ovenproof skillet, cook onion, covered, in 2 teaspoons of the oil over medium heat 10 minutes, stirring occasionally. Uncover and add mushrooms. Cook and additional 5 minutes. Add pear and thyme. Cook 3-5 minutes or until pear is tender, stirring occasionally. Set aside.
  2. Preheat oven to 400 degrees F. Using a sharp knife, carefully cut a large pocket in the side of the turkey tenderloin. Cut horizontally but don't cut all the way through. Spoon onion mixture into the pocket and secure the opening with wooden toothpicks. Sprinkle top of turkey with salt and pepper.
  3. With paper towels, carefully wipe out the skillet. Add remaining 1 teaspoon oil and heat over medium heat. Add stuffed tenderloin, top side down, to hot skillet and brown. Turn tenderloin right side up and roast, uncovered, in the oven about 20 minutes or until no longer pink (170ºF). Cover with foil and let rest 5 minutes before slicing.
