Lemon Turkey Scallopini

Ingredients
- 1 lb. turkey or chicken breast, boneless
- 1/3 cup flour mixed with 1/2 teaspoon each salt and pepper
- 2 tablespoons butter, divided
- 1 tablespoon olive oil
- 1/2 cup dry white wine
- 3 tablespoons lemon juice
- 2 tablespoons chopped parsley
- 1 large clove garlic, crushed
- Fresh parsley and thinly sliced lemon for garnish
Directions
- Flatten meat to 1/4'' thickness. In pie plate, coat meat n flour mixture. Shake off excess.
- In large skillet over medium high heat, melt one tablespoon of butter with oil. Add meat and cook in batches, about 3 minutes per side or until golden brown. Remove cutlets and keep warm.
- Add remaining butter, wine and lemon juice and stir. Cook until heated through scraping brown bits in pan.
- Stir in parsley and garlic. Pour over cutlets and garnish with parsley and lemon slices. Serve immediately.
Notes
You can make this dish with turkey, chicken or pork tenderloin.
