Mashed Sweet Potatoes with Walnuts

Ingredients

  • 2 lbs. sweet potatoes, scrubbed and peeled
  • 2 teaspoons salt
  • 1/4 cup (1/2 stick) unsalted butter
  • 1/2 cup whipping cream
  • 1/2 cup finely chopped walnuts
  • 1 1/2 cups miniature marshmallows

Directions

  1. Preheat oven to 375 degrees F. Spray a pie plate with a nonstick cooking spray and set aside.
  2. Place sweet potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil, reduce heat to medium and cook until soft, about 20 minutes. Drain potatoes and set aside to cool. Drain potatoes and return to pot.
  3. Add butter to potatoes and mix on medium low with a hand mixer until blended. Add cream, a bit at a time, incorporating into the potatoes. Add walnuts and mix again.
  4. Spoon potatoes into the coated pie plate, top with marshmallows and bake 20 minutes, until marshmallows are lightly browned.
