Potato Pancakes

Ingredients

  • 3-4 medium potatoes, peeled
  • 1 egg
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 cup onions, finely chopped
  • 1/4 cup minced green onions, including tops

Directions

  1. Grate potatoes finely into a colander and squeeze out excess water. Stir in eggs, onions and seasonings.
  2. Heat 1/4 cup oil in a heavy skillet over medium heat. When oil is hot, drop 2 tablespoons per pancake into hot oil and flatten into a pancake shape. Fry, one side at a time, until golden brown and potatoes are tender. Add oil as needed. Drain on paper towels.
