Sweet and Spicy Sesame Chicken

Savory sesame slow cooker chicken with a kick.

Ingredients

  • 1-1.5 lbs chicken breasts, boneless/skinless
  • 2 cups chicken broth
  • 2 cups water
  • 4 tbsp raw honey
  • 1 tsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tsp Sriracha
  • 4 tbsp soy sauce or tamari (tamari is a good gluten-free sub for soy sauce)
  • 2 tbsp tomato paste
  • 1 garlic clove- 1 heaping tsp minced
  • 1/2 cup minced yellow onion
  • 1 tsp minced jalapeno (or Serrano if preferred)
  • 2 tbsp water
  • 2 tsp corn starch starch
  • 1-2 tbsp sesame seeds to taste
  • scallions for garnish

Directions

  1. Add honey, sesame oil, soy sauce or tamari, tomato paste, Sriracha, and rice vinegar in a small bowl. Mix together.
  2. Finely dice the onion and jalepeno. Mince garlic clove. Add to bowl with other ingredients and stir.
  3. Mix the corn starch into 2 tbsp cold water. Stir until there are no clumps. Add mixture to sauce.
  4. Place the chicken breasts on the bottom of the crock pot. Pour in the chicken broth. Pour the sauce over the chicken, covering it completely.
  5. Cook on low for 6 hours.
  6. When done, shred the chicken in the crock pot and mix around with the sauce. Stir in the sesame seeds.
  7. Serve over rice topped with scallions.
