Roasted Red Potatoes with Bacon and Cheese

Ingredients

  • 1/2 cup reduced fat Ranch dressing
  • 1/2 cup reduced fat shredded cheddar cheese
  • 1/4 cup bacon bits
  • 2 lbs. small red potatoes, quartered
  • 1 tablespoon chopped fresh parsley
  • nonstick cooking spray

Directions

  1. Preheat oven to 350 degrees F. Mix dressing, cheese and bacon bits in a large bowl. Add potatoes and toss to coat.
  2. Pour into a lightly greased 13X9 baking dish and cover with foil.
  3. Bake 40 minutes. Remove foil and bake an additional 15 minutes or until potatoes are tender. Sprinkle with parsley.
