Baked Sweet Potatoes and Apples with Pecan Butter

Ingredients

  • 1/3 cup Land O Lakes® butter
  • 1/2 cup chopped pecans
  • 2 tablespoons orange juice
  • 1 tablespoon stone ground mustard
  • 1 tablespoon honey
  • 1 teaspoon freshly grated orange peel
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 3 medium sweet potatoes, peeled and sliced to 1/2'' thickness
  • 3 small tart cooking apples, sliced horizontally 1/2'', seeds removed

Directions

  1. Heat oven to 375 degrees F. Melt butter in a 13X9 baking pan in the oven (4-6 minutes). Stir in all remaining ingredients except potatoes and apples. Place sweet potatoes in the butter mixture and toss to coat.
  2. Bake 30-40 minutes or until potatoes are fork tender. Add apples and spoon butter mixture over apples. Continue baking for 15-20 minutes or until apples are tender.
